Job SummaryOur Pastry Culinarian is a key player in making sure
our pastry offerings are top-notch. In addition to providing
unparalleled guest service and supporting the Bakery team, you'll
prepare the best and most delicious cakes, tortes, and tarts, and
keep our cases full of beautiful sweet creations. Job
Description
- Experience Required: 1 to 3 years; Two years pastry arts
experience & passing written exam
- Experience Desired: Prior experience in bakery or related
field
- Education Desired: High school diploma or equivalent
- Certification or Licensing Required: One of the follow is
required: Graduate of accredited (ACF, CIA, Johnson/Wales) culinary
program in pastry/culinary arts; Assoc. Degree in Culinary Arts,
pastry concentration & passing written/prac exam; Two (2) years
pastry arts experience & passing written/prac exam
- Lifting Requirement: Up to 50 pounds
- Age Requirement: At least 18 years of ageJob Responsibilities
- Operate various pieces of equipment, including mixers, scales,
airbrush gun, knives, cut gloves and personal protective equipment
(anti-slip shoes).
- Demonstrate knowledge of equipment operations and safety.
- Maintain safety as the top priority in all aspects of our work,
for our Team Members, guests, and products.
- Provide unparalleled guest service, constantly striving to
delight and surprise our guests, vendors, and stakeholders.
- Work as part of a team, creating unique-authentic-scratch
pastries, which include breakfast pastries, unique desserts, and
upscale cakes.
- Possess and demonstrate a strong commitment to technical
expertise in the fine art of pastry creation and design.
- Possess basic pastry knowledge that includes: baking/patisserie
ingredient transformation, baking/patisserie products and
procedures such as mixing procedures.
- Possess knowledge of and ability to produce meringues, pastry
creams, ganache, puff pastry products, eclairs, sponge cake and
other cake mixing procedures and various buttercreams.
- Maintain cleanliness of equipment, tables, utensils, floor,
etc. to ensure that safety and sanitation regulations are met.
- Maintain proper emergency procedures, cleanups, steritech,
proper lifting and housekeeping to ensure department standards are
met.
- Maintains department procedures, daily setups, order taking,
understanding copyright policies and proper product rotation. About
